Hokey Pokey bikkies

Monday 9pm, is the time I realise there is nothing in the cupboards for upcoming school lunches. I’m so tempted to zip down to the shop to stock up on shop bikkies and packeted snacks. Instead I try to bake. I do this because:

  • It’s usually quicker.
  • It’s tastier.
  • No stupid packaging.
  • It’s cheaper.
  • You can watch The New Girl and drink a glass of wine at the same time.

The raw Hokey Pokey mixture isn’t quite as good as the raw choc chip bikkies mix, but it’s still pretty yum. It also uses no-nonsense basic ingredients. You could probably drizzle fancy chocolate over them if you want. I don’t like to share my choc with my kids though. Many Kiwis will recognise this recipe from the good ol’ Edmonds Cook Book. I have used mine for 20 years now. It’s awesome.

  • Combine 125g butter, half cup sugar, 1 tablespoon golden syrup and 1 tablespoon of milk in a saucepan and melt it all together until nearly boiling. Stir constantly.
  • Remove from heat and cool to lukewarm.
  • Add 1.5 cups flour and 1 teaspoon baking soda. Mix well, roll into balls and flatten a bit.
  • Bake 180deg Celsius for 15-20 minutes.
